Romanticizing My Slow Life in English Countryside (while staying realistic) - Cottagecore Diaries

How I romanticize slow living in English countryside while staying realistic and dealing with real life issues. I moved to the countryside 1.5 years ago and a lot has changed since then. I realised that I wanted to be closer to nature and city life wasn't really for me. I had to go through a lot of inner and outer change to live this life that I have right now, and in a lot of ways it's not perfect. I don't intend it to be. It's still real, it's still difficult. But there are certain ways I choose to look at things which make life a little bit easier. _________ Chocolate Fudge recipe from this video (vegan, but can be made non vegan, no baking required) 200g condensed coconut milk (you can use regular condensed milk for non vegan version) 80g almond butter 180g melted dark chocolate (I used 70% cacao, if you want sweeter fudge then use 50%) Vanilla extract A pinch of salt Roasted Spanish almonds and roasted pecans (any nuts will work, especially roasted hazelnuts!) Melt chocolate over a pot of boiling water or in microwave. While it’s warm add condensed milk, almond butter, vanilla and salt. Mix well - the mixture will become pretty thick. Add roasted almonds and pecans. Line a baking dish with parchment paper, scoop out the fudge onto the paper and press with the spatula to the desired thickness and shape.
