All the vegan food I ate while camping for 2 days #shorts ⛺️🌲✨

Here are some of the easy vegan meals we ate while camping last week ⛺️🌲✨ This time I decided to do a lot of prep in advance so I could spend more time enjoying nature (instead of chopping veggies with a dull knife at a picnic table…IYKYK) We ate the same thing for breakfast and lunch both days to keep things easy and I also did all of the chopping, seasoning, and rice cooking ahead of time. ☕️ Breakfast: cold brew coffee + protein bar 🥗Lunch: pasta salad with chickpeas, roasted veg, fresh tomatoes & parsley, olives, and a lemon garlic olive oil dressing 🌶️Dinner 1: TexMex bowls with fajita veg, brown rice I cooked in salsa, black enchilada beans, avocado, and lime! 🍚Dinner 2: Green bean tofu stir fry with reheated white rice Obviously this is just meant as inspiration, I hope you were able to find some part of it helpful!
