Vanilla extract ¼ tsp. Salt 1 tsp. Baking powder 2 Tbps. apple sauce ¼ cup maple syrup 1 cups chocolate chips, or more if you love chocolate! Directions: Preheat oven to 350 degrees F. Place the cottage cheese, maple syrup and vanilla extract in a blender and blend until completely smooth. Pour this into a large bowl. In another bowl combine the 1 ½ cups almond flour, protein powder, baking powder, and salt and stir to combine. Pour the dry ingredients into the wet ingredients and stir until combined. Add the apple sauce and stir again. If at this point the batter is not thick enough to hold its shape as a little ball, then add more almond flour until you get a thick consistency. Fold in the chocolate chips. Place spoonfuls of the dough onto a parchment paper covered baking sheet and press down on the dough with a spoon or fork as they won’t spread like a regular cookie. Bake in the oven for 12 to 14 minutes or until the bottom of the cookie turns a golden brown. Enjoy these protein packed cookies with a glass of milk! Thanks for watching and sharing!
